Tangy Grilled Asparagus

It’s time to fire up the grill! Try this simple and delicious asparagus recipe by Sarah Hotchkiss, Basics Board member and owner of Catalyst Wellness Coaching.

Tangy Grilled Asparagus Instructions:

1. In a large resealable plastic bag, combine balsamic vinegar, salt, coconut oil, pepper and garlic.

2. Add asparagus and lightly squeeze bag to coat asparagus with marinade; seal bag. Let stand for 30 minutes. Remove asparagus from marinade. Discard marinade.

3. Grill asparagus over medium heat on barbecue, turning occasionally until tender, about 5-7 minutes. Enjoy!

Ingredients

1/4 cup Balsamic vinegar

2 tbsp Coconut oil

1/2 tsp Black pepper (omit for Auto Immune Protocol version)

1 clove Garlic

24 medium spears Asparagus (trimmed)

With Earth Day coming up on April 20, we are reminded to think about our impact on the environment. A great and tasty way to lessen our footprint is to purchase local, which reduces carbon emissions found in long distance transportation.

One such local option is Brix Cider located in Mt.Horeb, WI. They produce their ciders using 100% locally grown apples and other local ingredients whenever they are able to do so. We carry 3 varieties in glass bottles (glass is also an environmentally friendly material!)
