My wife and I have been Basics customers in three different locations going back almost four decades.

We felt that supporting local businesses was important. We especially like buying the bulk Paleo granola, which is very-difficult-to-impossible to find elsewhere. We also like the Paeleon olive oil, raw honey, Sunspire Carob chips, and the Montmorency tart cherry concentrate.

We are grateful to the Co-op for carrying healthy food products that are not regularly stocked in other area stores. We appreciate being introduced to food items we would not find in supermarkets.

One of our favorite recipes is “Korean BBQ Sloppy Joes”.  Basics’ Mother-in-Law’s gochujang is less hot with more complex flavors than mainstream gochujang.

Korean BBQ Sloppy Joes

  • 1 lb. grass-fed ground beef

  • 1 lb. sweet onions, chopped

  • 1 cup organic ketchup

  • 1 lb. sliced mushrooms

  • 1/2 c. maple syrup

  • 1 Tbsp. Mother-In-Law’s Garlic Gochujang Fermented Chile Sauce

Brown the ground beef in a medium skillet and set aside. In a large skillet, saute onions in 1 Tbsp olive oil, add sliced mushrooms and saute over medium heat until the onions are “sweated” and the mushrooms are moist and heated through (about 10 minutes). Mix in browned beef. Add ketchup, maple syrup and gochujang sauce. Simmer 20 minutes stirring occasionally. Serve on ciabiatta buns and enjoy the interplay of sweet maple syrup with the after-heat of the gochujang sauce.
